What does food use N2O for?

In fatty substances, the N2O gas dissolves quite easily. It is dissolved in the fatty cream in aerosol whipped cream until it leaves the can, at which point it becomes gaseous and produces foam. When used in this fashion, it yields whipped cream that has four times the liquid’s volume, as opposed to two times when the cream is beaten with air. If air were employed as a propellant, oxygen would hasten the rancidification of the butterfat, but nitrous oxide prevents this from happening. Carbon dioxide cannot be used to make whipped cream because it is acidic in water, which would curdle the cream and give it a “sparkling” sensation similar to seltzer.
The whipped cream made with nitrous oxide whipped cream canisters is unstable. It will, however, return to a more liquid state within 30 minutes to an hour. Therefore, the technique is unsuitable for painting food that won’t be served immediately.
