N2 vs N2O Chargers: What’s the Difference
Many people assume N2 and N2O chargers are interchangeable because they look so similar. Both come in small steel canisters, and both are commonly used in cafés, kitchens, and beverage applications. However, they contain different gases and are made for different purposes. Using the wrong type can affect the texture, pressure, and final result.

What Are N2 Chargers and N2O Chargers?
N2 chargers contain food-grade nitrogen gas, listed as E941. They are mainly used to add a smooth, creamy texture to cold beverages such as nitro cold brew coffee, certain beers, and some cocktails. The gas creates very fine bubbles that stay suspended in the liquid and produce the familiar cascading effect when poured.
N2O chargers contain food-grade nitrous oxide, listed as E942. These are the standard cream chargers used with whipped cream dispensers. Nitrous oxide dissolves into the fat in cream and expands when the pressure is released, turning liquid cream into stable whipped cream or light foams.
The canisters themselves are similar in size and appearance. The difference is the gas inside and the result it produces. Checking the label for “nitrogen,” “N2,” “nitrous oxide,” or “N2O” is the simplest way to avoid mixing them up.
Key Differences Between N2 vs N2O Chargers
N2 and N2O chargers contain different gases, so they behave differently when they are added to food or beverages. That difference is what makes each gas suitable for a different type of application.

Gas Type and Solubility
N2O chargers contain nitrous oxide, a food additive listed as E942. N2O is relatively soluble in fats, which is important when it is used with cream. Inside a cream dispenser, the gas dissolves into the cream under pressure. When the cream is dispensed, the pressure drops and the gas expands, helping create the light, stable texture associated with whipped cream.
N2 chargers contain nitrogen, listed as E941. Nitrogen has much lower solubility in water and fats. In a beverage, it forms very fine bubbles that give the drink a smooth mouthfeel and, in systems designed for nitro beverages, the familiar cascading effect.

Nitrogen is also neutral in flavor, so it does not add sweetness or a distinct taste to the beverage.

What Happens If You Use the Wrong One?
The two gases are not interchangeable, and using the wrong charger can noticeably affect the final result.
An N2 charger, for example, will not whip cream properly in a standard cream dispenser. Nitrogen does not dissolve in cream the way nitrous oxide does, so there is little aeration when the cream is dispensed. The result is usually a mostly liquid mixture or a thin foam that quickly loses its structure. In the end, both the cream and the charger may go to waste.
The same problem occurs when N2O is used for nitro cold brew. Instead of the fine bubbles and smooth cascading effect created by nitrogen, the coffee tends to develop a thicker, frothier head. N2O can also add a slightly sweet note to the drink, which is not characteristic of pure nitrogen. The result may look and taste quite different from a typical nitro cold brew.

How to Choose the Right Charger
For whipped cream, dessert toppings, light foams, or flavor infusions, choose N2O chargers. Nitrous oxide works well with standard cream whippers and helps create the smooth, stable texture these applications need. Standard 8g cream chargers are a common choice for this type of use.
